Mushrooms sweat A LOT of moisture so I add them after I've browned the meat and deglazed the fond and after Ive done the onions/shallots/leek and deglazed that. I qlso chop them fine so that I can get rid of as much moisture from them as possible before then adding my root vegetables. And no I usually just have bread and butter to dip in and have plenty of root vegetables. I cut them into small cubes so that I can get as much as possible in my dutch oven.
