That's not always the case. Was it hit by a car or did the tyre run directly over it and smoosh it?
I had a roadkilled hare a while back who was almost perfectly intact. Just got a knock on the head, and I wasn't going to eat that part anyway.

Probably the healthiest thing I eat regularly.

Incidentally, I stewed the other half of this guy just the other day. In a whole bottle of red wine.
Came out lovely.

I'm a big fan of game birds as well.
