Op you just need to keep practicing. I recommend watching shows like Alton Brown' Good Eats and Chef John on YouTube. I went from literally not being able to cook anything but mac and cheese to being put on kitchen duty for Thanksgiving due to being the only person in my family that can cook

Just stick with simple meals at first and always watch videos before trying to cook something. It will show you a lot of little things that recipes skip over because they think it's common knowledge

What most people forget when choosing a favorite TV Chef is the "TV" aspect. Alton showed people what to cook, how to cook it, explained why and how the science of cooking works, and did it all in an entertaining engaging way. Sure there are better Chefs, and sure there are better shows, but Alton was the perfect balance of both.
