I drank Şalgam in adana and did like it, but for pickled vegs I prefer them snappy when bitten, but soft enough to bend/fold over on itself with a fork, perferably slightly cooled
Id take my spice as seasoning/sauce/paste on the meat itself so I can alternate between savoury and refreshing
