Restaurant ideas thread - what are some of yours?

For me it's a "not sushi" restaurant. We serve foods that aren't sushi, styled like sushi. For instance, one of our signature dishes is "hotdog 'sushi'" which consists of a literal hotdog in a bun sliced into 6 pieces and each piece arranged as a sushi roll would be. Then we squirt ketchup and mustard on top and serve with a little soy sauce cup with cola in it for dipping. It's served with chopsticks and costs $6.99 per "roll".
