Same one from alst night regarding how to slow cook pulled pork.

It's been cooking right now at 110 degrees for 5 hours and its starting to look black and smell burnt.

For the last 3-4 hours should I just cover the whole thing in foil?

Hey /ck/,

I recently moved to Eastern Europe from the U.S. While I love the food here, it doesn't look like they've got a stomach for truly spicy food, because both the restaurant offerings and the hotsauces available are garbage. But I can buy dried hot peppers, so I figured I might make my own hotsauce.

I need help not as much with the flavor ingredients as with the process. How do I make a hotsauce that won't go bad for a long time (refrigerated)? I understand that most use vinegar. How much is enough to help it keep from going bad? I don't want to use too much. How should I make it? Should I use tomato paste as a base or can I avoid that?

tl;dr: How do I make good home-made hotsauce that will keep for a long time when refrigerated?

Picture is the hotsauce I would buy if they had any and that I am now trying to emulate.
