Panda Express is probably the worst example of American-Chinese food. That was kind of the point. Calling it "American Salaryman food" was meant to make the contrast between Japanese Salarymen, who at least stereotypically have lots of really good small restaurants and food stands to choose from during their soul crushing 18 hour days, whereas in the US people who have cushy jobs are for some reason spending their money eating the shittiest chain food possible, which most people otherwise typically avoid. I wasn't trying to make some kind of overarching value judgment; it's just really bizarre how people eat in different countries depending on the context. I'm pretty sure the only reason most chain restaurants like Panda Express, Chipotle, Panera, or Applebee's are even in business at all at this point is because of office workers regularly ordering in food from those places.
