i'm a little younger than you, i live alone.
>stock my pantry with staples: pasta, rice, dried beans and lentils, spice drawer, bread, dates and dried fruit, nuts, crackers, tortillas
in the winter and fall, when produce is more expensive and lower quality, I add canned tomatoes, dried chilis, dried mushrooms to my pantry.
>don't go cheap on: evoo, herbs, vinegars (balsamic/red wine/white wine), fish sauce, butter (always unsalted butter)
I always have a combination of fresh parsley, cilantro, rosemary, thyme, oregano, coriander, chives, dill depending on what looks good. you can freeze herbs to use later but I wouldnt recommend it. I prefer to save the trimmings in the freezer to make stock with later.
buy evoo butter and herbs in low quantities so they don't go bad or decrease in quality, same with spice drawer
>produce that lasts a long time and is versatile: carrots celery onions shallots garlic peppers corn
be able to use these ingredients in multiple dishes, make them staples of your grocery list. again, save trimmings for stock or pickle them before they go bad
>proteins: a whole chicken/duck has 8 different cuts and lots of trimmings for stock, same with most seafood
>proteins: buy ground beef in bulk, portion it out in tinfoil and freeze, same with sausages and shrimp
>proteins: eggs eggs eggs so many ways to make eggs, last a long time, use to make mayo
>cheese: parmigiano, baby bells, mexican cheese, gouda, blue cheese can last weeks
>more dairy: sour cream, milk, halfnhalf, yogurt, ice cream
>essential condiments and ingredients with almost infinite shelf life: mustard, ketchup, honey, miso, gochujong, anchovies, worcestershire, mayo, pickles, olives, hot sauce (a vinegar hot sauce like tobasco and a latin one like el yucateco), tomato paste, peanut butter, jelly, maple syrup
>fruit: get what's in season, replace junk food and deserts and sugary breakfasts with fruit. you'll feel better.

Funnily enough it was at my lowest weight, 120lb. I got the 40 mcnuggs with a large coke and fucked vacuumed those down like an animal while no lifing valheim with a friend when it came out
