Imo this step is a pointless waste of time and effort, you don't even taste the skin when it's baked
>cut potatoes into 4 or 6 depending on the size
>parboil for like 5-10 minutes or until they just start breaking apart (i usually add some salt to the water, and a bit of oil)
>drain and let them steam for 5-10 minutes
>place in oven, skin side down ~200celcius
>generously drizzle oil (can use any really.. i use sunflower or olive oil)
>salt lightly
>check every 20 or so minutes. You don't really need to turn them since the skin is crisping up even faced up.
>when cooked, add a bit more salt and some a light drizzle of oil then shake
