some of my fave pasta dishes are meatless, I love meat and a spicy Penne a Pollo is sure behind Spaghetti Ale Olio but still dig the flavor of this.

Starting with my personal fave.

Ingredients:

Kosher salt
1 pound dried spaghetti, such as DeCecco
1/3 cup good olive oil
8 large garlic cloves, cut into thin slivers
1/2 teaspoon crushed red pepper flakes
1/2 cup minced fresh parsley
1 cup freshly grated Parmesan cheese, plus extra for serving

Simple enough to make:
Bring a large pot of water to a boil. Add 2 tablespoons of salt and the pasta and cook for 2-5 minutes usually depending on how much you put in, you'll know as it wilts. Once it's almost ready but still undercooked, strain it out over the sink and empty some of the pasta water into a cup.

Heat the olive oil over medium heat in the same pot (freshly emptied as the pasta dries), Add the garlic and cook for 2 minutes, stirring frequently. Add the red pepper flakes and cook for 30 seconds. Now I add the spaghetti to the pan and start mixing it in, after a minute or so add the reserved pasta-cooking water to the garlic and oil and bring to a boil. Lower the heat, add 1 teaspoon of salt, and simmer for about 5 minutes then it should be ready to plate up.

Watched a few tutorials on different ways to make it.
