Those JP bartenders are trained. I work in an Agricultural school and about a sixth of the students here are in food service training. They are crazy practiced at pouring tea properly and serving cakes the "right" way. It's intense.

Japan is generally very into anyone learning about Japanese culture, and is very interested in how it is seen in other countries.

Japan feels similarly about cuisine from other countries. Many Japanese fusion foods are considered completely foreign by Japanese people, such as omurice or hayashi rice. Because they have an origin overseas, they aren't seen as traditional Japanese foods.
But this doesn't apply to everything, obviously. Tempura has a foreign origin too.
