the secret is to cut the cabbage, and toss it with quite a lot of flaky salt in a colander. Let it sit for 15 mins, then dry it in a clean tea towel.

That tenderizes it, and draws quite a lot of water out, so your dressing doesn't get gross.

There are a LOT of good slaw dressings.
Mayo is good.
Basic vinegrette is good
Tahini sauce is good
Nuoc cham is good.

The technique to prep it is more important.
