My favorite knife in my collection is my Global 20cm Chefs knife.
It's a pleasure to use, holds an edge well, was a reasonable price, when I'm cutting things up with it I feel like I'm doing surgery unlike the expensive knives my mother has that feel huge and clunky. Not sure what brand my mothers knives are but they are really nice looking knives from Spain.

I have a global and I just use one of these wet wheel things, works ok for my needs.

It will be pretty obvious when you need to replace your board, they are designed to protect your bench top so if your bench starts getting scratched under your board then it's time.

Knife brand is a different thing altogether.
A good knife can range in price from $30 - $300
I'm just a cook at home type guy and I use Global but different people like different things.

I have that sharpener too, works good for me because I'm limited with time.

I have a Global knife that I like, it came with this sharpening wheel thing that works pretty well.
I payed about 70 bucks for the knife.
