The southern US's food is farmer/slave food so it needed to have a lot of calories to use as energy for manual labor, and so that persists, making it delicious. Blacks especially feel tied to the food because after the Civil War many of them moved to northern cities and they retained their culinary traditions as part of their identity in much the same way any immigrant group would, which is why people are more familiar with it than Midwestern peasant food which is equally caloric but not as famous: it's all over the country.
