The mark of a true genius is the perfect fish and chips.

The fish should be crispy, but not greasy. The real challenge is the chips though, it's very easy to fuck up the chips and impressive when you get them right. Not too dry, not too undercooked, not too soggy. Crisp, but mushy. Golden brown, the perfect amount of salt and vinegar, piping hot.

Seafood is shit, and I say this as someone who lives by the sea.

I would give up seafood in a heartbeat. But I would never give up beef, pork, or chicken.

In fact I think the only type of seafood I've had in the last year would be cod and chips, which I've had on maybe three occasions.

I do like fish and chips, but I can't give up beef pork and chicken.

Obligatory. Has to be from an actual seaside chip shop though. The chip shops in America taste nothing like how it is supposed to and I’ve been to a few.
