chorizo with rice is pretty good, you know what vegetables you'll like with it so go with those.
I like gnocchi with artichokes, capers, pancetta (just use bacon if you want, any cured pork really) shallots with basil pesto.
You can never go wrong with a baked potato with bacon+mushroom (i like to add worcestershire to the pan)and sour cream and scallions

Just consider the things you like anon and how they'd go together well, there is no real recipe just keep it simple
