all the milkfat separated, and you got left with the titty liquid and lactose, there's your problem.
If you wanted to boil the noodles in the sauce, you should've used something with high milkfat content, like heavy cream as the other anon suggested.
You could even get away with 2% milk made into a semi-thin bechamel.
Honestly, you're much better off boiling the noodles in salted water, while you make your sauce separately, it's much more streamlined.
Second post is how I make mac n cheese, sans the heated milk, you don't need to heat the milk.
>Add the cheese, stir, and leave the pot on the stove on low for three minutes
why lmao? Once the cheese melts, you're good to go, if you leave it on the stove the cheese is just going to fucking curdle up.
I'd actually recommend you take the pot off the stove entirely, you have more than enough heat there to melt cheese.

>boiling the noodles in the milk
all the milkfat curdled, and you were left with the separated titty liquid and lactose, that's your problem.
If you really wanted to boil the noodles in your sauce, you'd need something with high milkfat content, i.e. heavy cream like the other anon said (but that's fattening as fuck so you might want to reconsider).
You could even get away with 2% milk if you made a semi-thin roux out of it prior.
But I'd recommend you rather boil the noodles in salted water, and make your sauce separately; Much more streamlined and hassle free. Second reply is how I make mac.
>Turn heat to lowest
if you're using a saucepan with a thick bottom, just take the pot off the element entirely, you don't need that shit anymore
>cover lid and let sit for three minutes
literally why lmao, that shit's dumb and is going to make your cheese curdle if you leave the pot on the stove; don't do that. When the cheese is melted you're good to go.
