Hey /ck/ been interested in making tonkotsu from scratch so we’re gonna try it soon. Never made ramen from scratch before. Anyone familiar with the process, can you add any tips or tricks to make it better?
>broth
~3 lb pig feet
Piece of pork fat
Cover with water 2 inches above feet
Boil for 10 min, skim scum, remove from water, rinse, add back to clean pot with water
Roast aromatics, green onion, 2-3 knobs ginger, large yellow onion, several cloves garlic, add to pot
Bring to just over simmer (rolling but not boiling) for 12 hours, stir occasionally
Add water every so often to avoid it reducing too much

What do I need to make some tonkotsu ramen?
Every recipe I see says to use pigs feet or pork bones but I can't ever find that in Walmart and there's no butcher around where I live. There is a small Asian grocery store so they will probably have some things I need. Also the chasu pork belly i think could be made in an air fryer

Just had real Ramen for the first time. Pork Tonkatsu. Tasted delicious but I have 2 questions.
Why is there an egg in the Ramen? I mainly threw that away but why is there?
And the other question is what this weird brown rectangular thing in my Ramen was. I ate it but idk what it was that I chewed.

Tonkonstu Ramen. It's fatty, it's salty, it's full of protein and other crap, it'll rehydrate you, you got a load of starchy noodles to provide sugars and soak up stuff in your stomach.

For me, it's ramen. It isn't bad, but it has never impressed me from any restaurant I've ever eaten at. I don't get the hype at all, except for people fetishizing japanese culture

Legit ramen shops take the most pride in their noodles and broth. If you don't want instant noodles, then you should go to your local asian store's cold section and see if frozen noodles exist. I'm in Seattle, so there are tons of different options and it's kinda experimentation as to which one is best for you.

As for the broth, well, that's were the most time and effort is really put in. Ingredients are usually boiled over night or even longer. (I wonder if a crockpot would work?)

Youtube has tons and tons of videos and ideas as to how you can make your broth. There are different base flavors, different ingredients and all together, different soup experiences out there and it's going to be up to you to decide which one sounds the best and within your skill limit.
