I agree, and the entire Culinary world is wrong: cutting your steak into pieces before eating is a shit tactic meant for presentation.
The other reason is fine Lords and Ladies crammed as many people as possible into a Dining Hall, so it was impolite to cut your meat throughout your meal.

If you are a proper Amerifat, you have enough room to cut each piece off, thus preserving the steak as long as possible on the plate. I know most Yuropoors live all crammed together like pigs, but if you can afford a steak you should have enough room to cut your meat as you go along.
