having some trouble making ravioli

the filling is waterlogging the pasta almost immediately, causing it to stick and fall apart

I tried using thicker pasta, but this resulted in a poor finished product

So I want to make some raviolis for either tonight or tomorrow, and I want to make them from scratch.

Does anyone have a pasta dough recipe they recommend? And I was thinking about just filling them with ricotta, Parmesan, mozzarella, that kind of stuff, for my first time. I'd like to practice before stuffing them with anything else.

I don't have a stand mixer, so could using a food processor work to make the dough? I do have a pasta roller (where I clip it to the counter and use my arm to crank it so it's not an automatic roller.)
