katsu is easy but it has to have panko crumbs and bulldog sauce to be japanese

the most important thing really is finding a nice short grain rice, like japonica or jasmine, and working out how to cook it so it's sticky and chopstickable.

looks great but the chicken is over and man i don't see the point in hard boiled eggs i know it's traditional but with ramen i think it's just a thing to flesh out the dish and make it more substantial it's not delicious

chicken katsu with rice wine vinegar/sesame/garlic sigeumchi-namul & jasmine rice
