This. Mayonnaise is already an emulsion of eggs and oil, so it's basically just a short cut from what you make in Carbonara. I usually just fry some ham crispy, then drain all the grease and pat it dry, and mix it with some mayonnaise and a few shakes of pepper et voila.

I like to use mayo in my Carbonara. It has the eggs and oil already mixed up, so it's kind of a short cut.

So i live in Kansas, and was reading about Carbonara on the internet, and decided to make my own. I thought that using the raw egg was gross and so I substituted mayonnaise (which is mostly egg), and for the pork stuff I used spam because it's what I had around. How did I do? Is this what they have in Italy?
