I know traditional paella is green beans and some stupid shit. The one everyone loves though can be done with shrimp, calamary, maybe some mussle, some boneless chicken pieces here and there and that should be it, most of the flavor comes from the burnt rice at the bottom and the shellfish

You should give it a quick light toasting with a minimal amount of butter.
