I make mine from regular, old bread dough. I use a relatively short fermentation and a relatively low hydration (55%) white bread dough.

I form the dough into bagels, boil them briefly, dip them in a tub of water that's been spiked with baked bicarb (baking it heightens its alkilinity) then bake until done.

Dunno what the recipe you gave is like since pic related.
