Back in the 19th century, a chef to the king of Britbong invented a sauce that eventually became A1. Probably bullshit, but the myth goes it's because the king though it was top shit and said it was A1 like best of the best sort.
Also ketchup/catsup being made of tomato is a pretty recent thing, throughout most of history it was just fermented savory just about anything. Mushrooms, fish, whatever.
