As far as I know, vinegar or salt based hot sauce doesn't really need refrigeration.

Take Tabasco for example. they sell a "special reserve" that was bottled in 2011. (this excludes the years of aging in its oak barrels).

I've personally had a gallon of Tabasco Original Hot Sauce for about a year and it doen't smell rancid at all even though I've just left it in my room. (mind you I have AC in Summer/ Heat in Winter)

Other sauces I don't know about though

Pic related. I actually bought one of these fucking monstrosities.
I also bought a 2011 reserve with a chrome holder which cost about as much as the fucking jug.

All in all I paid a little over $100 usd for hot sauce. Am I normal?
