Recipes with no tomatoes are more regional, but there's many. Where I'm from (center Puglia) there's different types of bitter or sweet greens that go well with pasta, eggs or meat (cicorie, cime di rapa, finocchietto, rucola..); mushrooms like Cardoncello, burrata (pic related), and for sweets we often use almonds, wine, or a dense cream made from figs called vincotto.
