1. Not sure why you think it's undervalued, westerners eat a LOT of pork. It's not as big a proportion of the meat eaten as it is in Asia, but it's still very popular.

2. Pork is harder to prepare. A lot of people can't do it right.

3. It's not the west so much as the anglosphere, and that's because beef is an anglo thing. Go to Quebec or Europe outside of the British isles and you'll see way more pork on the menu.
