I feel like even Chinese restaurants have toned down their spice, I haven't gotten a general tso's with the little peppers in it in a long time. Sad times, maybe sign of end times? Who knows

so how come chinese dishes can't charge exhorbant prices like french cuisine? Maybe david chang is onto something, as many dishes are equally if not more complex compared to western dishes.

That looks more like what would be called sweet and sour chicken around here. General Tso's should look like this. Note the dried chiles and halfhearted broccoli.

Complete noob but I found a dish I enjoy (General Tsos Chicken)

I've got the sauce down, but how do you fry the chicken to get it juicy on the inside but crispy on the outside? Brine the chicken beforehand? Cook it at higher temp for less time?
