As fortune would have it, I baked some banana bread recently in the fml thread. Let me give you Yuropoors the recipe. Would try to convert to metric but I don’t really know how you people measure ingredients.

>3 or 4 overripe bannas, frozen and then thawed out
>2 cups flour
>1 teaspoon baking soda
>1/4 teaspoon salt
>3/4 cup brown sugar plus more for topping
>1/2 cup chopped walnuts
>2 eggs
>1/2 cup softened butter
>cinnamon, cloves, nutmeg, and allspice to taste

Preheat your oven to 350F(175C). Cream together the brown sugar and butter. Mash peeled bananas and combine with butter/sugar mixture, eggs, and spices. Mix until well combined. In a large mixing bowl, combine flour, baking soda, and salt. Add in the wet ingredients and walnuts. Mix until just combined, don’t over-mix. Pour into a loaf pan greased with more butter. Bake for 30 minutes, then top with a few pads of butter, brown sugar, and more spices to taste. Bake an additional 20-30 minutes or until an inserted toothpick comes out clean. Let it cool a little before slicing, serve with butter and coffee or tea. As for the spices, I do about a teaspoon each except for the cinnamon, which I use about 3 teaspoons of.
