I've done his beef burgundy, eclairs, croquembouche, and sort of his cassoulet and they all turned out great. I like that he doesn't cheapen his recipes with lame shortcuts and doesn't pad his video with plugging sponsors like Ragusea or Babish and doesn't fuck around with trying to science the shit out of a recipe like Ragusea or Alex. He's pure technique, method, and sex appeal.

Just pipe slowly. I'm not sure about combining the mini ones, can you not just scoop up the batter and return it to the bag or has it stuck to your tray too much?
