Soba sauce. There are different names, but basically the same thing: Hon-Tsuyu, Soba-Tsuyu or Kombu-Tsuyu, doesn't matter. Better than Soysauce, especially in Japanese dishes. Adds Seaweed, Soy, Dashi and Sake flavour.

Cold Somen with Spring onions and Soba Tsuyu.
If you don't find Soba Tsuyu, Hon-Tsuyu or Kombu Tsuyu will do. They are all sauces based on Kombu Seaweed, Dashi stock, Sugar Vinegar and Soysauce. You can add Sake for additional flavour boost.

I prefer simple Showa or pre-Showa-era working-class foods like cold Soba, Somen, Nikujaga, Gyudon, Tamamo Kake Gohan. They tend to be healthy and cheap, so I can invest all the money in the freshness of the ingredients and only a few items like Soba-Sauce.

I've replaced Soysauce with Soba Tsuyu. It's like ten times better, with fish and algae flavours. I've also replaced Pesto with XO Sauce.

Soba is best cold and with Soba Tsuyu and optional Spring Onions. If you can't get Soba Tsuyu, make some with Soysauce, Dashi, Sugar and Rice Vinegar. Alternatively, just lemonjuice. Some people add Wasabi or grated Ginger.

I stopped using Soysauce when I bought my first Soba Sauce.
