Why is turkey and chicken when it comes to cold cut sandwiches way more flavorful than ham or beef or other red meats even though usually is the opposite?

Can we have a sandwich at home thread? Not sandwiches from shops, but made at home. Talk about the most common sandwich you eat, your preferred sandwich, post pics if possible of sandwiches you have recently constructed. I often eat a basic turkey sandwich just like this one, it's just kind of my "go to".
