The dominant flavour of the dish is that of palm oil, which I forgot to mention.

Now, our palm oil is native, and we don’t have any orangutangs in this continent (aside from politicians). I think it’s a different kind of palm oil from the one used by Nestle and other brands, because it’s very red in colour (ours is), and it has a very pronounced floral aroma and taste. I recommend trying to find it in a Brazilian or Latin American store or website; just make sure it’s “azeite de dendê.”

From my list, I also forgot bell peppers and coriander, as well.

As for the fish, many can be used: grouper, snook, school shark, swordfish.
