having worked as a line cook in buffalo for many years this is pretty much spot on except for dredging them in flour. no one does that here, but i actually prefer it and always dredge mine as those shits can hold a lot more sawss that way. also butter is just to cut the franks so unless you are a pussy you can cut the butter. we use butter for mild and medium. anything above that is just franks or franks plus some other hot shit. looking now at your ratio you have more butter than franks making yours even worse than mild, which would be a fucking disgrace
