I'm partial to dinuguan but I think most Filipino food might be an acquired taste.

There's Filipino Dinuguan - which is a blood pudding stew that looks like chocolate
It's made with Pork offal, pig's blood, vinegar, garlic, and chili
It's actually my go to dish at a Filipino restaurant

bruh I usually pass on the lechon kawali if it's some greasy diner. usually the pieces you get are way too fucking greasy and way too little of the dipping sauce that's supposed to come with it

Lechon Kawali (crispy deep fried pork belly) and Dinuguan (pork blood stew) are my go to Filipino foods. That stuff would scare of most folks though.

I love Dinuguan and Lechon Kawali. I'm guessing that probably isn't entry level food for squeamish types trying Filipino cuisine for the first time - stick to adobo and lumpia
