when i was a kid and saw this in the cupboard, i always thought the little icon was a pepper that was sweating mushrooms to indicate that it was spicy and savory.

very much like chicken, but slightly more agreeable and less funky. The grain is slightly tighter but meat is a little tougher
Makes phenomenal stock and the offal is wonderful, provided petey was happy
The best thing to do is salt or brine the day before and just cook very gently on the bone

The best small game is probably squirrel though - one of the tastiest things I've ever eaten
