Thanks friend, my first attempt at pancetta. That one was a Yorkshire I raised on local by-products: almond hulls (which contain shells and small nuts), wine lees (basically dead yeast and wine and grape solids), and whey and old cheese wheels that cracked and shit. Mix it all up and the pigs love that stuff. I got a couple of Berkshires yesterday to slaughter this winter. Here's the prosciutto I'm doing too. I did it Tuscan style rubbed in spices because we skinned the hogs and I wanted a little antibacterial barrier to make up for it.
