I've heard of "knight's sauce" in real life a couple times if my memory isn't failing, and it might be, being similar to bechamel but more primitive and not being made with roux. Basically cream thickened with flour. Feel free to post /a//ck/. I want some dragon cuisine myself. It seems like it would be like some really tough and flavorful alligator, and you'd need something to break down the tissue. Maybe make a forcemeat.

Because it's a low wage job with high pressure and competition: where some people work with retarded servers, customers who think they know better or complain to show off (or just don't read the menu, and often have to clean all the nasty ass dishes at the end of the night. Not to mention all the health code regulations and the fact that restaurants rarely make enough to survive because customers don't understand overhead and throw a conniption fit if prices go up.

So fucking crazy stress and people thinking the kitchen is a magical cupboard that all food can come from, exactly the way each person wants it, and at the cost of the raw ingredients.
