So is raw meat dangerous to handle or not?

>Go to local butcher
>Ask for pork shoulder
>He cuts it up without wearing gloves, bags it without washing hands, then hands me change without washing hands
>Does the same to all other customers, apparently without problem

What's the deal? If there was a significant risk of contamination/food poisoning then surely all the contact between plastic bags, coins and the raw meat would cause problems?
