Tomato sauce. I hated Tomato sauce as a kid.
And then I as I got older, I snapped and thought "wait, this is pathetic, harboring resentment towards fucking sauce" and just started eating it. And with that, any real picky eating habits just died as well. Cooking and eating fine food is lovely.

I'd say it's a combination of parents not cooking, and introducing kids to foods either not quick enough or too quick. Toddlers are notoriously picky eaters because if something doesn't have the right texture or consistency, I guess their toddler brains just throw an upset that they're going to die.
