You're over thinking this like most people do these days with what should be a simple concept.

I'd get make it a Chinese, and get the best chefs and source the highest quality meat possible. I would spend a lot on making the restaurant look spectacular but still comfy and practical.

My most unique USP would probably just be that I won't charge extortionate amounts for a meal. Unless it's Kobe beef or something like that.
