This. this so much. Nothing beats a good classic chicken noodle soup.

>onion, carrot, celery

>lots of garlic
>chicken stock (preferably homemade)
>a bit of tomato paste or puree
>egg noodles
>thyme, parsley, and any other herbs as desired

My second favorite soups are tied between onion soup and cioppino.

egg noodles are so important in soups because they won't get too soft and turn to mush as fast as non-egg pasta does.

I personally like to roast or steam my veggies until they get some brown color and tender before tossing them in the soup for better flavor.

And for classic chicken noodle soup you should get parsnips and turnips in there in addition to the mirepoix (celery, onion, and carrot).

Weather's been getting chilly lately so I'm thinking of treating myself by cozying up with some good old chicken soup.

How's my list of ingredients so far?

recommend good vegetables to put in chicken soup besides just onion, celery, and carrot.
