It can take a good hour or more for a decent sized turtle to quit kicking after you take its head off. Alligators are the same way. Bullfrogs, too.
I think it has something to do with their brains being so primitive that a lot of their motor control and reflexes are wrapped up in their spinal column.
But what do I know I eat turtles.

I worked for a stand at the farmer's market that got busted for buying imported produce from the big county farmers market and selling it as local produce at the smaller ones.
After that I worked at a distillery making liquor and it was hot and the work was hard but I liked the process a lot. We made plenty of aged house fermented liquor, but the money maker for any young booze house is white liquor and that was all misrepresented. All the marketing led the consumer to believe all the vodka and gin was house fermented from local produce but we just bought in high test from a chemical company and processed it. The boss was from California and an enormous asshole so I quit.
I worked at a farm after that but the owner misrepresented his product, too. We sold ourselves as a small, fresh product straight from the farm but when our of product ran out we bought in commercial large scale agricultural product and processed it and sold it as local grown to all the restaurants and at the farmers markets. Didnt even harvest for a few seasons but still bought in and sold like we did. Quit that too.

So what I learned is that everyone lies in the food game. The fish special at your local fine dining is either an endangered species or tilapia. No one is working as hard as they say they are to make whatever they're selling you as local artisan green organic whatever. It's all bullshit.
