Mainstream American carnist society has rabidly limited views of what meats are ok.

Boneless skinless chicken breasts, BBQ "ribs" made of pink slime, and slimy steamed chicken wings slathered in hot sauce and dipped in ranch: ok and good.

Parts of the animal with recognizable anatomical features, animals that are not chickens or cows or pigs bred for leanness instead of flavor: not ok, very icky, possibly vegan, ISIS-influenced, or both.

Lamb, dogs, horses etc: barbaric, how could you do that to such noble creatures! You are disgusting and you obviously hate America.

Arroz chaufa, tallarín saltado, and some dumplings, the local name for which I don't remember.

Anyway it tasted like American Chinese food would taste if you tried to make it with ingredients available in rural Peru. The soy sauce was incredibly bland but the flavors were still a welcome change of pace after a steady diet of greasy white rice, greasy potatoes, and hard boiled eggs.

Hard to narrow it down, but one of my most memorable was when I was backpacking in northeast Peru and a local Chinese-Peruvian family made me stop at their restaurant because they didn't see too many Asians in that area I guess. They refused my money and I tried Chinese-Peruvian food for the first time while listening to their explanations of the food and their ethnic narrative.

This was years before you narrow minded people learned about such things via foodie blogs, and I knew full well I was experiencing a gastronomic delight that most sheltered fear-gripped American carnist racists could never dream of. Compared to the Michelin starred joints I've been to, this was a far superior experience in every way.

Even chicken thighs and chicken feet are exotic. Wings are of course well known because of hooters, and breasts are "normal meat" and everyone knows that. But self-appointed "foodies" have declared thighs to be a superfood with dramatic and unusual textures and flavors, the antithesis of the pedestrian breast which is not ok to like.
