I'm 6'3 and she's 5'9, so Sakura/Nozaki wouldn't work well, unfortunately.

I don't mind crossdressing if it suits my frame.

I'm 130 lbs and she's around 105. So we'd like to play lanky/lithe characters probably.

Those are some pretty tough first time cosplay if you don't have any sewing or crafting experience, with the exception of Luigi. Not trying to discourage you, just fair warning that they are probably more difficult than you may think, and you will probably get very frustrated during construction.

Since you posted Sheik, what about Young Link instead? His deku shield and short sword are much easier to make than the hyrule shield and master sword, and his outfit is much more forgiving if you don't get the fit perfect.
