Anyway you WANT the hourglass shape. You want to end the doublet somewhere around where the breastplate ends if you have one. That's usually around the end of the ribcage.

The doublet is works as a corset, when you tie it up properly. Hose does that too to your stomach. Don't think like extreme victorian era corsets just some light thing that shapes you a little but doesn't restrict your movement, after a few minutes you forget that it's there.
