For fabric, I'd recommend either felt or minky. Since this is obviously your first project, felt would be a better option, for the time being.
You'll need yellow and pink, and I'd recommend some fabric paint to do the eyes and cutie mark, instead of sewing them on.

Print out the patterns, cut them out, retrace them on your fabric with about half-an-inch border along the edges (retrace as many times as the pattern says, like for the sides of the head, you'll need to make 2).
Sew them together inside-out. I'm assuming you don't have a sewing machine either (although that'll be really hard to do for a beginner on a small project), so hand-sewing is fine. I hope you have a lot of patience.
Sew using a running stitch (there are loads of tutorials on that) along that extra-half-inch of fabric, try to make the stitches small, neat, and straight.
Make sure you leave a hole, about an inch long (somewhere discreet, like the back of her neck or something). Turn the plush inside-out from there, then stuff it, and sew her back up as neatly as your can (you'll probably do a whip stitch, and that's fine for now, as long as it's neat).

I don't think I need to explain how to paint the eyes and cutie mark, but I recommend doing that before you start sewing, just be very cautious as to what side of the fabric you're putting them on.
