Large scale battles in the SCA usually lack organisation. some small unit tactics but normally it devolves into a big long line poking at each other with the longest "spear" they can hold while shield men try to protect on either side. Pennsic has so many people on the field that have not really trained for large scale fighting that real organization becomes impossible.

On the smaller scale you can see pike formations or if enough greeks and romans are out there a phalanx or testudo aren't unheard of but it takes planning.

Think of it like this.. gather together a thousand people who all like reenactment and sword fighting, but each has different gear and armor individualized and for the most part unique to them. then divide them in half and tell these people most of whom just met this weekend to organize an army and fight.
