What about landscape/scenery paintings? Like the background art you see in Ghibli works. It would stand out against other booths and if done well enough, it's a niche that will resonate with older buyers, anyone who wants an art they can appreciate on their wall, and even normie family/friends who got dragged to the con.

As a frequent congoer and artist, prints that have good background/perspective and aren't just a character in 3/4 view with photoshop shapes for bg immediately grab my interest. A print of the bakery interior with Kiki stocking the shelves or something would interest me more than a generic Kiki on her broom with a vignette sky behind her.
